What's Growing In The Garden

Just before the rain began yesterday, I took a little stroll through the garden to see what was blooming and if I could find anything that needed harvesting from the veggie patch.  

Most of the zinnias that came up are blooming now and this is a new one that I tried.  I don't remember what it is called, but I kind of like it.  


I have a few different colored sunflowers that I planted this year.  I can't
wait to see what this one will look like in full bloom!

If I can keep the deer away, I might have a nice garden this year.  Everything is growing by leaps and bounds, especially the zucchini!

 

This is what I gathered out of the garden before the rain.  The yellow squash isn't quite as prolific as zucchini.  Some of these big boys got away from me.  I think they grow a foot overnight.  I will peel and cut these up into chunks and freeze to put into vegetable soup.

Some of the zucchini will be shredded and put into freezer bags for bread.  I made 2 loaves of zucchini and 1 loaf of banana bread Saturday.  We love a slice of bread with a little cream cheese spread over the top with our morning coffee.  Yum, Yum! 


 Spicy Zucchini Bread

3 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
*1 teaspoon nutmeg 
1 cup chopped pecans
3/4 cup vegetable oil
3 eggs
2 cups sugar
2 teaspoons vanilla
3 cups unpeeled, shredded zucchini

Combine first 6 ingredients in a bowl.  Make a well
in the center of mixture.  Combine oil, eggs, sugar and
vanilla.  Mix well then stir in the zucchini.  Add mixture
to the dry ingredients stirring just until moistened.  
Spoon mixture into 2 greased and floured loaf pans.
Bake at 350 degrees for 1 hour.
Cool 10 minutes and remove to wire rack and
cool completely.  Yield - 2 loaves of deliciousness!
*I omit the nutmeg

  2. Looks fantastic! I bought a big bunch of bananas so I could make some bread...they disappeared before I knew it! Somebody must have needed his potassium. Do you ever roast or grill zucchini with olive oil? Just saw that somewhere today. Funny... I often leave out the nutmeg or make up the difference with cinnamon.

  3. I love the zinnia and sunflower. Yellow squash (fried) is one of my favorites and of course, zucchini bread is so moist and delicious. I love the photos of your cats on your sidebar. Wishing you a wonderful evening.

  12. Bountiful harvest, Cheryl, and I well recall the years we planted a large garden and had many zucchini. I also made bread and quiche as well. But when I froze the zucchini it was too watery when defrosted. How do avoid this when you freeze them?

  15. Great things are growing in your garden. I hope you'll show another shot of that sunflower in full bloom. It looks like it is going to be so pretty. I planted some sunflower seeds this year, but they have a long ways to go to reach the size of yours.
    I am downright envious of your squash harvest. I tried my hand at growing zucchini a few times with one measly squash to show for my efforts. I had always thought it was easy to grow.
    Your zucchini bread looks delicious and the perfect accompaniment to a cup of coffee. Thanks for sharing your recipe.

    Zinnias are my favorites. Somehow I didn't get any in this year. Bad Patti.

  17. Oh my...that bread looks so wonderful. I have to confess that although I love zuccini bread, I have NEVER made any! I've got to do something about that...maybe even this weekend since my son has been offering me some out of his garden! I have eaten much of his yellow squash. So...here is my plan for the weekend, zucchini bread and fried green tomatoes1 :) Have a great holiday!
