Comfort food


I felt like some comfort food such as a nice bowl of soup would be just the thing as the snow was falling yesterday.  I made a pot of potato soup and this is the recipe I use:

Potato Soup
8-10 potatoes, peeled and cubed (6-8 if potatoes are very large)
1 onion, diced
1 stalk of celery, chopped (optional)
1 stick of butter (or less)
8 oz pkg of cream cheese
1 can cream of mushroom soup
1/2 soup can of milk
1 tsp garlic salt
salt and pepper to taste
1 cup shredded cheddar cheese
Garnish: additional shredded cheese, bacon bits and green onion

In a large pan or dutch oven, cover potatoes with water and boil potatoes, onions and celery until fork tender.  Do Not Drain The Water!  Cube the cream cheese and add to the hot potato mixture to melt.  Add butter, soup, garlic salt and salt and pepper.  Add milk.  Then, add shredded cheese.   It takes a while for the cream cheese to melt, I stirred the soup over low heat several times.   Fill soup bowls and garnish with addition cheese, bacon bits and green onions, if desired. 


Here is a photo of the plate under the soup bowl.   I've had this ironstone set several years now and we use them for "every day" during Christmas and part of the winter.

A cozy fire in the fireplace
Or perhaps a good book?
Maybe it's some great music
Or chocolate!
How about a good movie
or a dish of mac and cheese?
Scented candles are nice, too.

    I should be taking a shower right now, but I saw your blog and just had to comment... :0)

    I was hoping that you would post the recipe for your soup, even though I didn't know what kind you were making, I knew it would be delish! It looks so good - I can't wait to give it a try. The dishes are so pretty. I like to use my "Christmas" dishes throughout the winter months too, it just seems like the right thing to do!

    I love a wonderful scented candle anytime of the year, but in the winter time, it can make things seem so much brighter. I'm also a music junkie, so I always have some kind of music playing at my house. Comfort food is probably my biggest downfall - I grew up with a mom and grandmother who were wonderful cooks. Some of my fondest memories are of cooking and making wonderful meals with them. I was also raised part of the year in the mountains. We had a cabin and we spent most of the summer there, and a good part of the winter. So...a cozy fire can really bring back some good memories!

    I too am glad that you posted the recipe! Bob is out pushing snow & will be gone most of the day. I usually have vegetable soup or chili waiting for him on these snow days, but your potato soup sounds good today!

    When I'm home alone, I enjoy soft background music, sometimes a scented candle, & catch up on my magazine reading. Also, I grab my Kindle & read...until my eyes go crossed, getting sleepy! I love my family--but look forward to these quiet days!

  3. Oh I love me some good potato soup so I'll give this one a try. It sound delicious.....also very fattening!!! My mom always made me potato soup when I was sick and I still crave that after all these years.

  8. CHILI..... that is my comfort food in winter.... BUT--I love your potato soup... Sounds incredible....
