This 'N That And A Yummy Recipe


Happy Thursday to you! 

The big topic of conversation in my area is still the weather.
Will the river get out...will the rain ever end...how is your garden...etc.

I will NOT get depressed over the rain....I WILL NOT...I remember 
all too well the drought of last summer.  However, I'm a wee bit depressed because my garden looks bad and I can't do anything about it.  On the positive side, I haven't had to water my many
flower pots for days.  However, some of my flowers in the pots look waterlogged.  The above photos were taken over a week ago before the rains started.

my son took this shot on a trip out west recently.  I wish I were on 
my way out west to a sunnier and drier location right now!  


My Knockout Roses are knocking themselves out this year.
They are all just gorgeous and full of blooms.  I love this rose,  
they are so easy to grow and take care of!

Okay, before I share the recipe, I have to ask....do you wash your chicken before you cook it?  Well, I always have.  But, now they are saying that it may not be a good idea!  Here's a link to the article I read this morning:  http://shine.yahoo.com/shine-food/washing-chicken--do-i-really-have-to-do-that--162045546.html

And now for that recipe....

 Chicken Bombs

5 boneless, skinless, chicken breasts                        
5 jalapeño peppers
20 strips of bacon
4 oz cream cheese, softened
1 cup grated colby jack or cheddar cheese
salt and pepper to taste
1 cup BBQ sauce

Directions:
1.) Slice chicken breasts in half WIDTH wise (Each half will make 1 Chicken Bomb). Place between two pieces of wax paper and pound to 1/4 inch thickness or you can use a rolling pin to flatten.  Season each with salt and pepper.
2.) Slice jalapeños in half LENGTH wise and remove seeds, ribs, and the stem.
3.) In a small bowl, mix the softened cream cheese with the grated colby jack.
4.) Fill each jalapeño half with about 1 Tbs or more of the cheese mixture.

5.) Place 1 cheese filled jalapeño half at the end of each flattened breast piece and roll up.
6.) Wrap each breast piece with 2 slices of bacon and tuck the ends of the bacon under the strips.
7.) Preheat grill to 350 degrees.  Cook over indirect heat for 20-25 minutes; turning every 4-5 minutes.  Baste chicken with BBQ sauce each time you turn it, giving it one final basting right before it's done.  Chicken is ready when it reaches an internal temp of 165 degrees.


Makes 10 Chicken Bombs

To Bake:  Bake, uncovered, at 375 degrees for 30 minutes, basting with BBQ sauce a few times during cooking.  Baste once again when finished, and place under broil setting for a few minutes so bacon can crisp completely. 


My son made this dish for us this past weekend.  He had seen this recipe on Facebook and thought it sounded good.  We washed the chicken breasts first! Thanks, Brett, for introducing us to this delicious recipe.  My daughter said that it was her new favorite chicken recipe.  I will say again that it was scrumptious!!   Try it....you'll like it!

Note:  We made this recipe using just 4 chicken breasts and a pound of bacon.   I only had a couple of jalapeno peppers, so just half the breasts were made with them.  Put a dollop of the cheese mixture on the chicken and roll up and finish like the others.  Tasty!

  1. Ohhhhh, those do look delish. No, I do not wash chicken since hearing some doctor or other on Oprah years ago. He showed the difference between washing and not-washing and not- washing was far safer.

    That is a great pic out the plane window. Nice to have someone helping with the blogging!

    The rain will go and something else will take its place. Here the rain has gone leaving us with high humidity and temps in the high 80s. We're not used to this! Such crazy swings with weather. Hope your weather moderates soon.

  3. YUM... That recipe looks awesome. Your son must be an excellent cook... We don't eat Jalapeno peppers either --but I might be able to eat one or two... It still looks GREAT. Thanks!!!

    Sorry you are having so much rain. We went through that ALL spring here. The past week or two though, it has been dry. Now we are hoping for more rain.. ha

    One thing is for sure: Things are MUCH greener this year due to all of the rain... That is a good thing.

  4. Your recipe sounds very tasty! I love how full and beautiful your knockout roses are! We have the same rainy weather here. The new plants that I potted are loving it. I have one pot that doesn't drain as well as it should, so I tip it to empy the water if we get a lot.

  5. you are wishing for less rain and i am dancing around the pool doing a rain dance. i do wish the weather would kind of spread things out a little, but it will do what it wants. your flowers are beautiful and I hope to much rain doesn't harm them. the roses must love the rain. the dish looks good from here, i can almost smell the bacon and the sauce...

  11. Sorry that your weather has been a little drippy lately. In God's timing...the sun will shine and your garden will produce much. Great plane photo. the clouds are just gorgeous. I want to plant some of those roses, but I really am running out of places to add any more plants. They're so pretty, so I guess I'll just have to find a place. I do wash everything before I cook it. It's just a thing with me...not knowing what hands have touched my foods.
    I will tell you...this is certainly a good looking dish. I'm hungry right now..

  12. oh cheryl, your knockouts are really, mine are gorgeous as well this year and they have so many blooms!!

    the chicken looks really yummy, i don't like jalapeno peppers but i'll bet any pepper would be good or as you said, it could be omitted.

    i have always washed chicken before cooking it, these theories are always changing!!

  14. Well, first off-those Knock Out roses are a knock out for sure. I lost all four of my rose bushes due to the harsh winter-and I had moved them late in the season-sigh-

    That recipe sounds absolutely delicious! Yes- I have always washed my chicken,too...and will probably continue to do so. Love all the new "advice" that keeps coming along, don't you?

  15. Your post has everything today, gorgeous flowers and a yummy recipe! Your flowers really ARE beautiful. No, I have never washed my raw chicken. I called the toll free number for the Dept.Of Agriculture, their help line. They said that when the chicken cooks, once it reaches a certain temperature it kills all the germs. If you wash it, it spreads all the salmonella through your sink, then you have to disinfect your whole sink.

    I did wash my chicken until I read not to.

  21. I agree with TexWisGirl...I live in Texas, too. It was 94 today...I could use a little of your rain. I wonder if I could substitute the pre-cooked bacon with this recipe. Beautiful roses...

  22. We have been getting quick afternoon thunderstorms with just enough rain to keep everything very green. There is so much green around, in fact, that i feel like I'm living in Ireland! I know it won't last as the dry weather will be back soon, and it will all turn brown.

    This chicken sounds fabulous! I'll definitely try it!

  23. I really need to get some knockout roses. Mine are cursed with black spot and I hear those are immune.
    That recipe would be the death of me. I would eat them all as it has every thing I love and I am not known for my restraint. Maybe I could make just one?
    Like you, I have been in too many droughts to complain about rain. I still remember last summer.

  24. I have three separate rose bushes and they are growing mad and blooming like crazy too.

    The only thing that keeps my complaining where it should remain (in my mind) with our depressing storm driven weather is last summer's drought.

  25. WOW! Love those knockout roses! Just beautiful! We are water logged too! My hair salon flooded last night. (good thing they were able to clean up quickly, I have an appt tomorrow. :) A lot of people with basements flooded too. Eek!

    My pots are soggy too! You are right tho' last summer was SO hot and dry. Everything burned up. HOpefully mother nature will find balance. So far our forecast calls for rain everyday.

  27. Nope, don't "wash" chicken, before. The regular chickens you buy, are already coated with germs and bad things and stuff-you-don't-want-to-think-about. But... To "wash" them off, you may spread/splash these bad germs, etc., around your kitchen sink.

    Better to just cook.

    Actually.... Better to buy organically raised chickens, which are not cooped up in their own crap, all their lives.
